做法:春笋切成片(piàn )后加(jiā )少许盐(yán )捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
