做法:春笋(sǔn )切成片后加少(shǎo )许盐(yán )捞(lāo )出后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
