做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
