做(zuò )法:洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅(guō ),用姜块在(zài )锅(guō )上擦一遍,放(fàng )两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个(gè )半小时(shí ),下(xià )盐调(diào )味即可品尝。
