做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切(qiē )成(chéng )段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
