做法:春笋(sǔn )切(qiē )成片后加少许盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切(qiē )片,葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
