做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火(huǒ )。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
