做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮(pí )泡软,拍裂(liè )一小块姜(jiāng ),热锅(guō ),用(yòng )姜块在锅上擦一遍,放两(liǎng )勺油,待(dài )油六成热下鱼,煎至微黄。煮沸(fèi )瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲一(yī )个半小时(shí ),下盐调(diào )味即可品尝。
