做法:洗净宰好鲫(jì )鱼(yú ),洗(xǐ )净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热(rè )锅(guō ),用姜(jiāng )块(kuài )在锅上擦(cā )一遍,放两勺(sháo )油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个(gè )半(bàn )小(xiǎo )时,下盐调味即可品尝。
