做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加(jiā )入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少(shǎo )量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
