做法:春笋切成(chéng )片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中火(huǒ )。煮到水快(kuài )熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
