做法:春(chūn )笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干(gàn )的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
