做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中(zhōng )火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
