做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少(shǎo )量清(qīng )水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
