做法:洗净宰(zǎi )好鲫鱼(yú ),洗净淮山和(hé )薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦(cā )一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里(lǐ )的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小(xiǎo )火煲(bāo )一(yī )个半小时,下盐(yán )调味即可品尝。
