做法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻(fān )炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
