做法:洗净宰好鲫鱼(yú ),洗(xǐ )净淮山(shān )和薏米。用(yòng )清水把陈皮泡软,拍裂一(yī )小块姜,热锅,用姜(jiāng )块在锅上擦(cā )一遍,放两勺油,待(dài )油六成(chéng )热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎(jiān )煮好(hǎo )的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐调味即可品尝。
