做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火(huǒ )煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
