做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油六成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的(de )鲫鱼(yú )和其他材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小(xiǎo )时,下盐调(diào )味即可品尝。
