做法:春笋切成片(piàn )后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快(kuài )熬(áo )干的(de )时候加(jiā )入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅(guō )盖(gài )焖。
