做法:春(chūn )笋切成片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干(gàn )的(de )时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅(guō )盖焖。
