做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜,热锅(guō ),用姜块在锅上擦一遍,放两勺(sháo )油,待油六成(chéng )热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火(huǒ )煲一个半(bàn )小时(shí ),下盐(yán )调味(wèi )即可品尝。
