做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在锅上擦(cā )一遍,放两勺油(yóu ),待油六成热下鱼,煎(jiān )至(zhì )微黄(huáng )。煮沸瓦煲里的清水,放入煎(jiān )煮好(hǎo )的(de )鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小时(shí ),下盐调味即可品尝。
