做法:洗净宰(zǎi )好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在(zài )锅上(shàng )擦一遍,放两(liǎng )勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品(pǐn )尝。
