做法(fǎ ):洗(xǐ )净(jìng )宰好(hǎo )鲫鱼,洗净淮山和薏米。用清(qīng )水(shuǐ )把陈皮(pí )泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺油,待油六(liù )成热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个半小时(shí ),下盐调味即可品尝。
