做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转中火(huǒ )。煮到(dào )水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅(guō )盖(gài )焖。
