做(zuò )法:春笋切成片(piàn )后加少许盐捞出(chū )后用(yòng )清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
