做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再(zài )加(jiā )入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
