做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油(yóu ),放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
