做法:春(chūn )笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
