做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
