做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把(bǎ )陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦(cā )一遍(biàn ),放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的(de )清水,放入煎煮(zhǔ )好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时(shí ),下盐调味即可品尝。
