做(zuò )法(fǎ ):春笋(sǔn )切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
