做(zuò )法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用(yòng )清水把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅(guō )上(shàng )擦一遍(biàn ),放两勺油(yóu ),待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清(qīng )水,放入(rù )煎(jiān )煮好的鲫鱼和其他材料(liào ),武火煮沸,转中(zhōng )小火煲(bāo )一个半小时,下盐调味即可品尝。
