做法:洗(xǐ )净宰好(hǎo )鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅(guō ),用姜(jiāng )块在锅上擦一(yī )遍(biàn ),放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半(bàn )小时,下盐调味即可品尝。
