做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅(guō )上(shàng )擦一遍(biàn ),放两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼(yú )和(hé )其他材料,武火煮沸,转中小火煲一(yī )个半小时,下盐调(diào )味即可(kě )品尝。
