做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清(qīng )水(shuǐ )把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待(dài )油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入(rù )煎(jiān )煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小火煲(bāo )一个半小(xiǎo )时,下盐调味即可(kě )品(pǐn )尝。
