做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅(guō )盖焖。
