做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖焖。
