做法(fǎ ):春笋切成片(piàn )后加(jiā )少(shǎo )许盐(yán )捞出后用(yòng )清(qīng )水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
