做法:春笋切(qiē )成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍(shāo )收汁时盖(gài )上锅盖焖。
