做法:春(chūn )笋切(qiē )成片(piàn )后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
