做(zuò )法:春笋切成片(piàn )后加(jiā )少(shǎo )许盐捞出后用清(qīng )水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮(zhǔ )到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
