做(zuò )法(fǎ ):洗净宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水把(bǎ )陈皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一(yī )遍,放(fàng )两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和(hé )其他材料,武火煮沸,转中小(xiǎo )火(huǒ )煲一个半小时,下盐调味即可品尝。
