做法:春笋切成(chéng )片后(hòu )加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
