做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干的(de )时(shí )候加入盐(yán ),翻炒均匀稍(shāo )收(shōu )汁时盖(gài )上锅盖焖。
