做法:春(chūn )笋切成片后加(jiā )少许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加(jiā )入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
