做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
