做法:春笋切成片(piàn )后(hòu )加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧(shāo )热(rè ),倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入(rù )生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
