做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入(rù )盐(yán ),翻炒均(jun1 )匀稍(shāo )收(shōu )汁(zhī )时盖上锅盖(gài )焖。
